VTA Adjustment

Why is it that for the VPI Scout, it seems to be not possible to adjust the tonearm parallel to the platter or record with the stylus on a gauge or record, respectively, without losing the ability to lift the cartridge off the gauge or record? Only if I raise the pivot point and, hence, the tonearm height at that pivot point can I lift the stylus off the record. However, because of that raising of the tonearm's pivot point, the tonearm is no longer parallel to the records, which is against the recommendation of the Ortofon 2M Red and Blue cartridges and many others. It forces me to move away from the optimal (balanced) soundstage to one that emphasizes treble. Why is the design like that on an arguably well-designed and regarded turntable?
